If your not sure about doing something spontaneous with the girl your with ask her. Say... "would you mind if I held your hand". Personally I have wanted certain guys to put their arm around me. But... Sometimes, I found it so irritating I would cringe, I couldn't wait to get away from him. I suppose this is a chemistry thing.
